These meatballs were simple, full of flavor, but kind of… Generic. And I mean that in a good way! They are flavorful but taste great with any type of sauce, any topping, any noodle or vegetable or rice. Very versatile!
Makes about 3 dozen meatballs.
*1 pound ground beef
*1 pound ground pork
*2 tablespoons water
*1/4 teaspoon baking soda
*2 cloves garlic (as always, I’m not about rules, so used minced, chopped, powdered, etc.)
*2 teaspoons oregano (I used dried)
*2 teaspoons basil (I used dried)
*2 teaspoons parsley (I used dried)
*1 teaspoon salt
*1/4 teaspoon black pepper
*Preheat the oven to 400F. I use stone cookware, so things don’t stick badly, but use your judgement as far as parchment paper or greasing your pans.
*In a bowl, mix all ingredients by hand.
*Using your hands, begin to roll your mixture into 1-inch balls.
*Place the baking sheet into the oven and bake meatballs for 20-25 minutes, until browned and any juices are running clear.
Use as a side, to top a GF pasta or zoodles or whatever your heart desires!
