Banana Caramel Bites – Recipe


Makes 12 mini cups.


Chocolate Layer:
* 1/3 cup Enjoy Life Chocolate Chips
* 1 Tablespoon almond milk

Banana Layer:
* 1/4 cup canned coconut milk
* 2 teaspoons vanilla extract
* 1/3 cup mashed banana
* 1 Tablespoon honey
* Pinch of salt
* 1/3 cup homemade Almond Butter

Caramel Layer:
* 1/4 cup coconut milk (just the solid fat on top of the can)
* 1/4 cup honey
* 1 teaspoon vanilla
* Pinch of salt
* 1/3 cup crushed or chopped almonds or other nuts.

1. In a sauce pan, over low heat, mix the chocolate chips and the almond milk until a liquidy consistency.

2. Spoon chocolate mixture into mini muffin cups.

3. Place in refrigerator until chocolate has hardened.

4. Mix all ingredients from the Banana Layer in a blender or food processor until smooth. May still be fairly lumpy.

5. Pour Banana mixture on top of the hardened chocolate layer.

6. Place in freezer and wait until mostly frozen before topping with the caramel.

7. In a sauce pan on medium heat, mix together the coconut milk, honey, vanilla and salt. Stir continuously for approximately five minutes.

8. Remove from heat and stir in the nuts.

9. Let cool completely. Once cooled, mixture should be thicker and a caramel consistency.

10. Once the caramel is cooled and the banana mixture is frozen, layer the caramel on top and place back in the freezer.

11. Store in an airtight container in the freezer until about five minutes prior to eating.
